You should also allow the yeast to come alive in the room temp water for a few minutes with maybe a pinch of sugar in it. Especially before adding it to the flour with the salt in it.

You also might want to line the bottom of the pot you use with parchment. Sometimes it sticks and takes a few spatulas to get it out.

If you use foil, you'll have to dig small foil pieces out of the botom of the bread. :-(

i use a little wheat germ in the bottom of the pot to keep it from sticking.

One more tip... I would not use tap water full of fluoride & chlorine. Any bottled water would do.

MMMMM I <3 bread!! I could live on bread forever. The expensive stuff that gets stuck up the ass and inside the cracks of Bread is so over-rated.

I haven't made this in a long time. When I did it tonight, the batter seemed very dry. Is that what you experienced Jeeves? And much better in the morning?

The second loaf I made was less wet and I reduced the raising time from 16 to 12 hours and it came out so much better than the first one. It is really the best loaf of bread I have ever baked. I almost don't want to cut it.

Just made the dough. This feels like way too little yeast, but I followed the recipe to the T and will see how it turns out... low level of investment, anyway.
